One of my fondest memories from when i was a little girl was baking home made cakes with my mother. When I was about 7 i remember she and I making a HORSE cake together for my up coming birthday party. Of course there are no pictures of that cake anywhere (it seems that the camera must have been lost after brother #2 came along LOL). In any case this year I decided that from here on out I was going to make the girls birthday cakes. Sophia had so much fun trying to figure out just what she wanted finally deciding on Cupcakes both Chocolate and Vanilla with frosting to match and a Toy Story twist.
For Amelia's party we decided on a BIG chocolate brownie since we were having and Ice Cream Sundae Party (i HIGHLY recommend this kind of party it was so much fun for both the adults and the kids). I think all in all the two cakes came out pretty cute, don't ya think? Sophia has already started to plan for her next birthday cake :)
this brings me to the reason for this post... I know LONG winded.. Riz tells me all the time KEEP it Short but I can't help myself :) Sorry....
I am sure most of you out there in Blog world have seen or read these blogs with things like "Wordless Wednesday" or "Thoughtful Thursday" well i always like reading them but have never participated somehow I always feel like I am coming in to late to join in. For the last few weeks I have been getting up with Amelia (she wakes up at 6 am on the nose no matter what, little stinker) and making some sort of muffin. Honing my baking skills while trying out to recipes. I have been really enjoying this quiet time with just Amelia in the morning. I drink my coffee and she drinks her milk and we talk (well I talk she babbles) but we are spending some good mother daughter bonding time over flower, eggs,sugar,baking soda, salt and whatever yummy goodness we can find to put in the batter... Today a take on one of our favorite pancake recipes Banana Sour Cream muffins....Yummy good and coming outta the oven as I type this.
my goal is to post every Sunday with our muffin recipe of the week..here is the recipe for Banana Nut Sour Cream muffins. ( I bet these would be delish with mini Chocolate chips in them as well).
Banana Nut Sour Cream Muffins
Preheat oven to 375 degrees.
Ingredients Sift together the following in a bowl:
2-1/4 cups all purpose flour
1 tsp baking powder
1/2 tsp baking soda 1/2 tsp salt
1/4 tsp nutmeg
Blend the following in a mixer until smooth
3 large ripe bananas, mashed
1/2 cup room temp. butter
1-1/2 cups sugar
Add the following to the mixer mixture (that is a tongue twister) and mix again:
2 eggs
3/4 cup sour cream
1/4 cup chopped walnuts
Add mixer ingredients to dry ingredients in bowl and mix well. Pour batter into greased muffin tins filling each 2/3 full. Bake for 20-25 minutes or until golden brown.
Makes 24 muffins.
I think they look lovely on my newly acquired Vintage Tupperware (my new obsession) dessert stand.
